Savory Quinoa Bowl
Ingredients:
- ½ cup cooked quinoa
- ½ cup roasted sweet potato cubes
- 1 cup fresh spinach
- ¼ cup chopped cilantro
- ¼ cup of sunflower seeds
- Olive oil and lemon juice for dressing
Instructions:
- Lightly coat glass baking pan or cast iron pan with coconut or olive oil
- Bake cubed sweet potatoes in pan at 375 for 20-25min in preheated oven
- Set aside sweet potatoes, allow to cool
- In a steamer, lightly steam the sunflower seeds for 7 minutes; allow to cool
- Chop spinach and set aside
- Layer the quinoa, roasted sweet potatoes, cilantro and spinach in a bowl.
- Sprinkle with sunflower seeds and drizzle with olive oil and lemon juice.
- Enjoy warm or cooled.
